Breakfast Barley Bowl with Strawberry Mint Chutney
This breakfast bowl is supportive for the spring season, as barley action in the body is dry, and so acts as a diuretic and a laxative. This helps to remove extra moisture, sluggishness, and heaviness of the earth elements from the body.
Ingredients: 1⁄2 C. pearled or hulled barley* 1⁄4 tsp. cardamom 1⁄2 tsp. cinnamon 1 tsp. ghee 1⁄4 C. stone fruit, berries, dried fruits (you can choose dependent on your constitution or imbalance, the season, and what is available) Nuts or Seeds (optional; nuts for the winter and seeds for the spring and summer) 1. Warm ghee in pot, swirl until melted 2. Lightly toast barley (and dried fruit if using) in the ghee 3. Stir in spices + 1 1⁄2 C. water. 4. Bring to boil, lower heat, cover and simmer for about 25 min. or until barley is soft.* 5. Add berries and mix in to soften. 6. Add nut milk, and organic maple syrup or raw, organic honey if desired. *Pearled barley cooks in 25 min., hulled cooks in about 40 min.
Serves: 4 STRAWBERRY & MINT CHUTNEY This recipe can be cut in half, as you want to use chutney within a few days, for its freshness and energetic qualities. Ingredients: • 1 Cup fresh, organic strawberries (important to use organic, as berries absorb pesticides easily) • 5 mint leaves • 1/4 tsp. black pepper • 1/4 tsp. fresh minced ginger root • 1/2 Tbsp. Organic ghee • 1 Tbsp. Raw organic honey Semi- puree strawberries in a small saucepan; add minced mint leaves, black pepper, and ginger. Warm the mixture over low heat for 10 minutes. Add ghee, remove from heat, and allow to cool. Stir in the honey before putting the chutney into a glass jar. Store at a cool room temp, or in fridge if not using in one day.

3 Cups Honeydew cut into chunks 1/4 Cup Aloe Vera Gel Mint to own taste 1 Tbsp, Rose water (optional) Light ice ( no more than 1/2 cup recommended, but if it's a scorcher you can go ahead and use a lil' more) Blend it up! It's as simple as that! *If more sweetness is desired, use just a tad simple syrup made with raw sugar, or maple syrup
